Although “to do that” and “to do so” sound similar, their meanings are quite different.
“To do that” is used to talk about an action that is complete.
“To do so” is used to talk about an action that is not complete.
For example,
I did that for you. –> I did a completed action for you.
I did so for you. –> I did an incomplete action for you.
