“See you on Friday” is correct because it is an adverbial phrase that modifies the verb phrase “see”. The adverbial phrase must be placed directly before the verb phrase it modifies.
‘See you on Friday’ is the correct version because ‘on’ is used to mean ‘on the day of’ and it would be ‘Friday’ not ‘Friday’s’ which would mean the day after (ie Thursday).
